An Indian sweet that is everyone’s all-time favorite and is also known as ‘Motichoor ke ladoo’. Always found at homes during Diwali, Pujas, or any other occasions. Even this ladoo is also made during Indian weddings. Boondi is the small, round shaped droplets made from either besan (gram flour) or maida (refined flour). So, here’s the recipe of delightful Boondi ke ladoo for the next festival or puja.

Ingredients

  • For the batter of Boondi:

  • 500 grams besan (Gram flour)

  • Water as required

  • For sugar syrup

  • 750 grams sugar

  • 3 1/2 cups water

  • Other ingredients:

  • 10-12 drops orange colour

  • Soaked saffron flakes

  • 50 grams cashew nuts, chopped

  • 50 grams raisins

  • 10 peeled and crushed cardamoms (elaichi)

  • 750 grams ghee for frying

  • Boondi fryer with medium-sized holes

Directions

  • Start by making the batter. For making the batter, mix besan (gram flour) and water in a bowl. Till the time you make the batter, heat ghee in a frying pan.
  • Once the batter is ready, place the batter on the boondi strainer and then place the strainer over the frying pan. Hit the strainer on the side of the pan and let the boondis drop in the ghee. In the same way, finish with the remaining batter.
  • Fry the boondis till they turn golden. Once turned gold, remove them in a plate.
  • Now, prepare sugar syrup by boiling sugar and water. To check if the consistency of the syrup, press a drop of the syrup between your thumb and the forefinger. If there is a thread-like formation, when you pull the fingers apart, the syrup is perfect and ready.
  • Once the syrup is prepared, add saffron water and color to the syrup. Then place the boondis in the syrup along with dry fruits and crushed cardamoms (elaichi).
  • Let it aside for 10 minutes and then sprinkle over little hot water and then again let it aside for 1 1/2 hours. Prepare the ladoos with moist hands.
  • Yummy Boondi ke ladoos are ready to munch. Pack the remaining ladoos and enjoy eating whenever you want.
