This dish comes from the state of Gujarat. As the name says, this is a spiced rice dish which is preferred to have on the cold, rainy day. Masala Bhaat is a gujrati version vegetable pulao which provides a superb aroma and delicious taste because of cooking rice and vegetables and ghee together. You can use any vegetables as per your choice or likes. As many vegetables bring color in the recipe.

Washed and Drained Rice (Long Grained Basmati Rice) – 1 ½ Cups
Ghee – 3 Tbsp
Laung (Cloves) – 2
Dalchini (Cinnamon) – ½” Stick
Jeera (Cumin Seeds – ½ Tsp
Hing (Asafoetida) – ¼ Tsp
Peeled Potato Cubes – 1 ½ Cups
Green Peas – 1 Cup
Peeled carrot cubes – 1 Cup
Turmeric Powder – ½ Tsp
Chilli Powder – 1 Tsp
Garam Masala – ½ Tsp
Salt – To taste
Fresh Curd – One Cup
Directions
- First clean and wash the rice. Then soak for 30 minutes at least in enough water. Post, drain the rice and keep aside.
- Take kadhai or non-stick pan, and heat the ghee. Next, add cinnamon, cloves and Cumin seeds. Saute them for few seconds.
- Once seeds start to crackle add asafoetida and all veggies like potatoes, green peas, carrot cubes, and salt. Mix them well and saute for 3-4 minutes on medium flame.
- Now add all the masalas, chilli powder, turmeric powder, Garam Masala. Mix them.
- Add rice into the mixture. Mix well and saute for around 5 minutes on medium flame.
- Add hot water and salt. Gently mix them well and cover the pan. Cook until the rice is cooked properly. Stir occasionally with gentle hands so that rice does not break
- Once done, Your Special Gujrati Masala Bhaat is ready.
How to Serve:
- Garnish with Fresh coriander leaves and serve with a cup of curd.
- You can sprinkle freshly chopped coriander leaves and squeeze some lemon juice over the rice for added freshness and flavor. Mix gently.
- Serve Hot: It is served. It piars well with curd or yogurt, pickle as sider or side of raita. You can also serve it with papad (thin crispy Indian crackers) or roasted papadums.
- Optional additions: For extra flavor, you can add roasted peanuts or cashews to the Masala Bhaat. You can also garnish with grated coconut or serve with a dollop of ghee on top.
